Creamed carrot soup, I love carrots, carrots are great to just crunch on, carrots are great to chop up and use in dips and their great for soup.
This creamed carrot soup recipe below uses not only carrot but parsnip and sweet potato, three root vegetables in one soup.
Now thats what I call creamed carrot souplicious.
Creamed carrot soup.
- 10 carrots - peeled and chopped
- 1 parsnip - peeled and chopped
- 1 medium sweet potato - peeled and chopped
- thumb size piece of ginger
- 500ml of veg stock
- 1/2 tsp of sea salt
- 1/2 tsp of ground black pepper
- 1/4 tsp of ground corriander
- 1/4 ground nutmeg
- 50g oatly creme fraiche
Peel the carrots, parsnip, sweet potato and chop into 1cm cubes. Peel and finely chop the ginger.
In a large saucepan bring the stock to the boil, tip in the carrot, parsnip, sweet potato and ginger, cover and cook on a low heat for about 20mins until soft.
Once soft, use a hand-held blender and purée, season with salt, pepper, coriander, nutmeg and stir in the oatly créme fraîche
All thats left to do now is tear of a chunk of fresh bread sit back and enjoy.
